Meat & Livestock Australia (MLA) in collaboration with Grand Hyatt Kuala Lumpur held  a Masterclass on Sushi Making with Aussie Beef and Lamb on Thursday 24 August. The event is also in conjunction with the hotel’s #DinewithChef Series featuring Chef Cash Fong -- A Japanese and Australian Epicurean Affair -- from 24 August to 3 September.

Aussie Grassfed beef is said to have a robust, earthy flavour and excellent texture. As a natural wholesome food, grassfed beef is seen as a vital component to a healthy diet, being naturally low in fat and cholesterol. It contains 12 essential nutrients required for good health, including Iron, Zinc, Omega-3 and B vitamins.

Grainfed Aussie beef including Aussie Wagyu beef comes from cattle that have been fed a nutritionally balanced, high energy finished rations for a specific period. This results in enhanced marbling, with improved tenderness, juiciness and flavour.

Aussie lamb, raised predominantly on pastures, produces nutritious lean meat which contains the same 12 essential nutrients as Aussie beef.

Chef Cash is the executive Japanese chef in the Tung Lok Group of Restaurants, Singapore. He takes charge of Tung Lok’s Ushio Sumiyaki Restaurant, a modern Japanese Charcoal Grill Bar and Douraku Sushi @ Park Regis.     

He is an award-winning chef, specialising not only in Japanese cuisine but also Chinese and western cuisines too. Chef Cash holds a Singapore ITE Sushi Certification.

The awards he has won include Taste of Japan Bronze Medal in 2017 and Singapore Masterchef Award 2019.

He is also an event chef, but he shows his exclusivity and creativity in private dining too. He has been involved in coaching and training for F&B outlets, conducting cooking demos and culinary courses and providing mentoring and coaching for international culinary competitions.
